I would recommend a real : ZAKS mine is hanging in threads but, it is very thorough and clear and better as a physical book to study and use as reference. If this is for the Next then a manual for the +3 contains some good detail on memory and variables and the book that comes with the Next will do I am sure. For the sound you need something on AY music not my area I am afraid. Other hardware like the DMA and Copper have yet to have books written on them... The complete Spectrum ROM disassembly is also very illuminating and has some clever Z80 to learn by example.
